How to Cook Spaghetti Squash in the Microwave

I am always on the lookout for ways to save time and energy when it comes to meal prep. And I am also always trying to find new ways to add more plant-based foods to my family’s diet. Vegetables can be a struggle, but they do all seem to enjoy spaghetti squash. That is when I actually find the time to cook it, until I discovered that you can cook spaghetti squash in the microwave. Amazing right? And it won’t blow up (as long as you poke it a bit before heating) which is even better. So if you love spaghetti squash but feel like you never have time to make it, this time saving hack is going to change your life (or at least change your menu a bit).

How to cook spaghetti squash in the microwave

- Using a paring knife, make a cut in the squash about 1/8- to 1/4-inch deep from stem to bottom on both sides. With a fork, poke the squash in a few places with either your paring knife or a dinner fork. Place the squash in the baking dish and microwave for 3 minutes on high.
- Remove from microwave with oven mitts. Place the squash on the cutting board and cut all the way through to the middle of the squash. Use your hands to pull the two halves apart and break the squash at the stem.With a spoon, scoop out the seeds. Try not to scoop out a lot of the squash.
- Using the same baking dish, flip the squash halves upside down in dish and pour about 1/2 inch level of water. Cook in the microwave for 5 minutes on high.
- Once squash is done, a fork should be able to poke through the skin easily. Microwave for another minute or two as needed. Remove from microwave. Place cooked squash on cutting board and use a fork to scrape the strands of squash from the inside.
- Once you have your spaghetti squash prepared, you just have to decide how you want to serve it. I like to keep it simple and sprinkle it with some Parmesan cheese and add a simple marinara sauce.
