Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 egg
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups oat flour
  • 1/4 cup blueberries (or 1/4 cup of chopped walnuts for toppings)

Instructions

  • Preheat oven to 350 degrees. Spray muffin pan.
  • Place bananas in a bowl and mash them.
  • Stir in melted butter, egg, sugar, vanilla, baking soda, and salt. Stir well.

  • Add oat flour and stir well.
  • Pour into prepared muffin pans.
