Oat Flour Banana Blueberry Muffins with Walnuts

- 3 ripe bananas
- 1/3 cup melted butter
- 1 egg
- 3/4 cup sugar
- 1 tsp vanilla
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups oat flour
- 1/4 cup blueberries (or 1/4 cup of chopped walnuts for toppings)
Preheat oven to 350 degrees. Spray muffin pan.
Place bananas in a bowl and mash them.
Stir in melted butter, egg, sugar, vanilla, baking soda, and salt. Stir well.
Add oat flour and stir well.
Pour into prepared muffin pans.
Sprinkle desired toppings on each muffin.⠀
Cook for 10-15 minutes until they start to brown and set.
Let cool on a rack before removing them.
Optional: add a handful of chopped nuts or chocolate chips when you add in the flour
