How to make this recipe
- Preheat the oven to 350º F.
- Cut the zucchini in half lengthwise and scoop out the inner “meat”. Cut the inner part of the zucchini into small cubes. Set the hollowed-out zucchini boats aside.
- In a non-stick skillet, add the olive oil and let it get warm. Then add the diced onion and zucchini to the pan. Cook for 10 minutes, or until the onion is translucent. Then, add the garlic powder, oregano, and diced zucchini to the pan and stir to combine.
- Arrange the zucchini boats on a baking tray lined with parchment paper and brush with olive oil.
- Bake the zucchini boats for 15 minutes, or until they just start to become soft.
- Scoop the zucchini and onion mixture into the zucchini boats and sprinkle parmesan cheese on top. Bake for 15 minutes, or until golden brown.

- 3 zucchini sliced in half and scooped out (reserve the "meat")
- 1 teaspoon olive oil
- 1 teaspoon garlic powder
- 1/4 cup onion chopped
- 1 zucchini diced
- 1 tablespoon dried oregano
- 3 tablespoons parmesan cheese grated
- salt and pepper to taste
