Chocolate Chip Carrot Muffins

These vegetable packed muffins are the perfect way to get picky eaters to add more vegetables to their plate

Ingredients

  • 2 cups carrots shredded
  • 1 medium banana ripe
  • 1/2 cup Greek yogurt plain
  • 1 egg
  • 2 tsp vanilla extract
  • 1 Tbs olive oil
  • 1/3 cup granulated sugar
  • 1.5 cup oat flour
  • 1 Tbs cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup dark chocolate chips

Instructions

  1. Mix together wet ingredients. 

  2. Add dry ingredients to create muffin mix. 

  3. Place into muffin tins and bake at 350 F for 12-15 minute.
