Chocolate Chip Prune Cookie Recipe

Ingredients

  • 1 cup Sunsweet D’Noir prunes
  • 1/4 cup water
  • 1 egg
  • 1 cup oat flour
  • 1/4 tsp vanilla
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup Greek yogurt, plain
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 F.

  2. In a food processor, add prunes and water and pulse until it has the texture of a puree (it will be a little thick and chunky- that’s OK!)

  3. In a large bowl, add in egg, vanilla, and Greek yogurt and mix until fully blended. 

  4. Add in pureed prunes to egg mixture and mix evenly.

  5. In a small bowl, mix together oat flour, baking powder, and salt.

  6. Add dry ingredients to wet ingredients slowly while mixing to create a dough. 

  7. Pour in chocolate chips and mix to evenly distribute.

  8. Scoop dough evenly onto a cookie tray lined with parchment paper. Bake at 350 F for 15 minutes or until a toothpick comes out clean.
